S3 is not a proprietary protocol of Amazon, s3 is a trade name for amazon's implementation of a REST file access API. There are other services that implement the same protocol, and I purchased the Filezilla pro version with the intention of using with a non-amazon REST file service. As the original reporter states, the "host" parameter is ignored, and the client instead tries to connect to s3.amazon.com. Clearly a bug.

Since FileZilla Pro 3.30.0 you can configure third-party S3 providers.
S3 is a proprietary protocol of Amazon. Amazon does not specify any means for third-party S3 providers.
A workaround may be added in a future version of FileZilla Pro.
